Vianočná Kapustnica
Our family's traditional Christmas sauerkraut soup. Dark, intense, and unashamedly sour—built on rich smoked meats, hand-picked dried forest mushrooms, and a heavy finishing pour of homemade juška.
Ingredients
The Sour Base & Forest Element
- 1 kg Fermented sauerkraut, unrinsed (Domáca Kyslá Kapusta)
- 500 ml Homemade Juška (cabbage fermentation juice)
- 40 g Hand-picked dried wild mushrooms (dried porcini or boletes)
The Meats
- 700 g Smoked pork ribs or smoked pork shoulder
- 300 g Quality smoked paprika sausage (Csabai or dry smoked pork sausage)
- 30 g Pork lard
Aromatics & Spices
- 2 Medium yellow onions, finely diced
- 4 cloves Fresh garlic, crushed
- 15 g Sweet paprika
- 4 Dried bay leaves
- 6 Whole allspice berries
- 10 Whole black peppercorns
- 2.5 L Cold water
To Serve
- Freshly baked thick-crust bread.
Method
- Hydrate the Mushrooms: Place dried mushrooms in a bowl and cover with 300 ml of hot water. Let them soak for 30 minutes. Once softened, lift the mushrooms out and roughly chop them. Strain and reserve the dark soaking liquid (discarding any sand settled at the bottom).
- Build the Smoked Broth: In a large heavy-bottomed pot over medium heat, combine the smoked pork, bay leaves, allspice, peppercorns, and 2.5 L cold water. Bring to a boil, then lower the heat and simmer partially covered for 60–90 minutes until the meat is fork-tender.
- Shred the Meat: Remove the smoked pork from the pot and let cool slightly on a cutting board. Shred into bite-sized pieces, discarding bone and excess fat. Keep the spiced broth simmering gently.
- Prepare the Paprika Base: In a separate skillet, melt pork lard over medium heat. Sauté diced onions for 8–10 minutes until soft and golden. Add crushed garlic and cook for 1 minute. Remove skillet from heat and stir in sweet paprika. Immediately splash a ladle of hot broth into the skillet to keep the paprika from scorching, then scrape the entire onion-paprika base into the main pot.
- Simmer the Soup: Add the unrinsed sauerkraut (roughly chopped if strands are too long), chopped mushrooms, their reserved soaking liquid, and the whole sausages into the soup pot. Simmer gently for 45 minutes to tenderize the cabbage.
- Finish and Sour: Remove the hot sausages, slice into thick coins, and return them to the pot along with the shredded smoked pork. Pour in the homemade juška (start with 300 ml, taste, and add up to 500 ml for a bright, sharp sour finish). Simmer uncovered for a final 15 minutes before serving.
Chef's Tip: Never rinse your sauerkraut—if it’s too sour, you bought the wrong cabbage. For the true Christmas Eve experience, the soup relies heavily on the sharp acidity of homemade juška cutting through rich, fatty smoked meat. Kapustnica is always exponentially better on the second and third day.
