Domáca Kyslá Kapusta (Tradičná Fermentácia)
Traditional Slovak wild-fermented barrel sauerkraut crafted with salt, whole caraway seeds, black peppercorns, bay leaves, and sliced apples, creating crisp cabbage and potent probiotic juška.
Ingredients
Cabbage & Salting Ratio (2% Rule)
- 5 kg Dense late-autumn white cabbage (biela kapusta), cored and shredded to 1.5–2 mm
- 100 g Pure non-iodized fine sea salt or pickling salt (strictly 2% of cabbage weight)
Traditional Aromatics & Spices
- 20 g Whole caraway seeds (celá rasca)
- 5 g Whole black peppercorns (celé čierne korenie)
- 3 g Whole allspice berries (nové korenie)
- 6 Dried bay leaves
- 2 Medium tart apples (e.g., Granny Smith or Idared), halved, cored, and thinly sliced (traditional Slovak starter & natural sugars)
- 1 Small yellow onion, thinly sliced (optional, classic regional addition)
- 3–4 Clean whole outer cabbage leaves (for topping and sealing)
Equipment Needed
- 1 Ceramic fermentation crock with water moat (kameninový súdok) or 5 L wide-mouth glass jar
- Fermentation weights (heavy clean stone or glass disc)
- Wooden kraut pounder or clean fists
Method
- Prep & Shred: Remove and reserve 3–4 clean, intact outer cabbage leaves. Quarter cabbage heads and cut out the tough core. Using a mandoline, kraut cutter, or sharp knife, shred the cabbage finely into uniform 1.5–2 mm ribbons.
- Salt & Massage (Tlačenie): Place shredded cabbage into a large sanitized basin or tub. Scatter the 100 g of non-iodized sea salt evenly over the shreds. Massage and knead vigorously with your hands for 10–12 minutes until the cell walls break down and copious amounts of natural brine release from the leaves. Let rest for 15 minutes to allow salt to draw out more moisture.
- Toss with Spices: Add whole caraway seeds, black peppercorns, and allspice berries. Toss thoroughly to distribute spices evenly throughout the mass.
- Pack the Crock (Layering): Pack a large handful of salted cabbage into the bottom of your sanitized ceramic crock or glass vessel. Pound down firmly with a wooden tamper or your fist to eliminate air pockets until brine rises above the cabbage layer. Tuck in a bay leaf and a few apple slices. Repeat in layers, pounding each batch firmly until the crock is packed, leaving at least 8–10 cm of headspace at the top.
- Submerge Under Brine: Ensure the natural brine completely submerges all shredded cabbage by at least 2–3 cm. Lay the reserved whole cabbage leaves over the shredded top, then place heavy sanitized ceramic fermentation weights on top to hold everything under the liquid.
- Fermentation Schedule:
- Warm Stage (Lactic Acid Kickoff): Seal crock lid and fill the water moat (or fit an airlock). Keep in a warm room (18°C–22°C) for 7 to 10 days. The water moat will bubble actively as gases escape; replenish moat water as needed.
- Cool Maturation: Move the vessel to a cool basement, pantry, or refrigerator (10°C–15°C) for 2 to 3 weeks to slowly mature, develop complex acidity, and preserve crunch.
- Harvest & Harvest Juška: Once pleasantly sour, crisp, and tangy, use directly in kapustnica, holúbky, and strapačky. Pour off the pure, probiotic sauerkraut juice (juška) into clean glass bottles to keep in the fridge for Východniarska Hubová Mačanka.
Chef's Tip: Weighing your salt to strictly 2% of the trimmed cabbage weight is non-negotiable—too little salt allows spoilage bacteria to take hold, while too much inhibits natural lactic acid fermentation. Tucking sliced tart apples into the layers provides natural fruit sugars that feed the wild lactobacillus early on, yielding crisp cabbage and that liquid gold: pure, unfiltered juška.
