Bryndzová Nátierka
The definitive Slovak sheep cheese spread — authentic bryndza whipped with softened butter, sweet paprika, whole caraway seeds, and salted spring scallions.
Ingredients
The Spread Base
- 250 g Authentic sheep bryndza (at room temperature)
- 100 g Unsalted butter, softened to room temperature
- 1 tsp Sweet paprika
- 1/2 tsp Crushed caraway seeds (drvená rasca)
- 1 tsp Dijon mustard
- 2 g Fine sea salt (taste first, as bryndza is naturally salted)
- 1 g Freshly cracked black pepper
Aromatics & Garnish
- 3 Spring onions or scallions, white and green parts finely sliced
- 1 tbsp Fresh chives, finely snipped
To Serve
- Fresh crusty bread, dark rye, or white Tradičné Rožky.
- Sliced crisp red radishes and raw green peppers on the side.
Method
- Prep the Scallions: Slice the scallions finely, place in a small bowl with a pinch of salt, and let rest for 5 minutes to release gentle onion juices and soften the sharp bite.
- Whip the Emulsion: In a mixing bowl, combine the softened room-temperature butter and bryndza. Whip vigorously with a fork or hand mixer until pale, light, and completely unified without butter lumps.
- Season: Beat in the sweet paprika, crushed caraway seeds, Dijon mustard, and black pepper until the spread turns an even, warm pastel orange.
- Fold Aromatics: Fold the salted spring onions and fresh chives gently into the whipped cheese base.
- Rest & Serve: Allow the spread to rest at room temperature for 15 minutes to let the caraway and paprika bloom into the fat. Slather thickly onto crusty bread or sliced rožky.
Chef's Tip: Having both the bryndza and butter at identical room temperature before whipping ensures a completely smooth, airy emulsion that won't split. Skipping sour cream prevents the spread from becoming watery and allows the pungent sheep milk terroir and sweet paprika to shine.
