Silk-smooth, airy whipped ham mousse blended from quality cooked ham, softened butter, mayonnaise, and Dijon mustard, crowned with fresh snipped chives.
Ingredients
The Mousse Base
- 250 g High-quality cooked deli ham, roughly diced
- 110 g Unsalted butter, softened to room temperature
- 35 g Quality mayonnaise
- 1 tsp Dijon mustard
- 1 pinch Sweet paprika (for subtle color and depth)
- 2 g Fine sea salt (adjust to taste depending on ham saltiness)
- 1 pinch Ground white or black pepper
Garnish & To Serve
- 2–3 tbsp Fresh chives, finely snipped
- Warm crusty bread, toasted brioche, or fresh Tradičné Rožky.
- Thinly sliced sweet pickled gherkins (optional).
Method
- Mince the Ham: Place the diced cooked ham into the bowl of a food processor. Pulse continuously until reduced to a very fine, uniform crumb.
- Blend with Butter & Mayo: Add the softened room-temperature butter, mayonnaise, Dijon mustard, sweet paprika, white pepper, and salt into the processor with the ham.
- Aerate into a Mousse: Run the food processor on high for 2 to 3 minutes, stopping once or twice to scrape down the sides with a spatula, until the mixture transforms into a pale pink, silky, and fully aerated mousse.
- Chill Briefly: Transfer the mousse to a serving bowl or pipe into ramekins. Rest in the fridge for 20 minutes to lightly stabilize the butter structure.
- Finish & Serve: Slather or pipe generously onto fresh bread or halved rožky, finishing with a dense blanket of freshly snipped chives over the top.
Chef's Tip: For that textbook deli-style mousse texture, make sure the butter is completely softened before blending. Running the food processor long enough emulsifies the ham fibers into the fat, creating a featherlight spread that pairs perfectly with the sharp, clean onion freshness of garden chives.
