Vajíčková Pomazánka
The ultimate nostalgic egg spread made with hard-boiled eggs, whipped softened butter, quality mayonnaise, Dijon mustard, and a shower of fresh chives.
Ingredients
The Spread Base
- 5 Large eggs, hard-boiled, cooled, and peeled
- 80 g Unsalted butter, softened to room temperature
- 45 g Quality mayonnaise
- 1 tsp Dijon mustard
- 2 tbsp Fresh chives or scallion greens, finely snipped
- 4 g Fine sea salt
- 1 g Freshly cracked black pepper
To Serve
- Fresh crusty sourdough, rye bread, or Tradičné Rožky.
- Sliced radishes and extra snipped chives.
Method
- Prep the Eggs: Slice the peeled hard-boiled eggs in half and separate the yolks from the whites.
- Whip the Base: Place the cooked egg yolks into a medium mixing bowl. Add the softened room-temperature butter and mayonnaise. Mash and whip vigorously with a fork or hand whisk until creamy, pale, and completely smooth.
- Grate the Whites: Coarsely grate the egg whites on a box grater (or finely mince them with a chef's knife).
- Combine & Season: Fold the grated egg whites, Dijon mustard, snipped chives, fine sea salt, and black pepper into the whipped yolk base. Stir gently until evenly incorporated.
- Rest & Serve: Let the spread sit at room temperature for 10 minutes (or chill briefly) so the flavors meld. Slather generously on thick slices of fresh bread or halved rožky.
