Obložené Chlebíčky
The ultimate Central European party and celebration staple — diagonal slices of soft white veka layered with rich parížsky šalát, classic zemiakový šalát, or whipped garlic butter, topped with fine cold cuts, hard-boiled egg, and deli garnishes.
Ingredients
The Bread Base
- 1 loaf Fresh white baguette or soft deli roll (veka), cut diagonally into 1.5 cm thick slices
Base Spreads (Choose One or Mix)
- 350 g Parížsky Šalát or classic Tradičný Zemiakový Šalát
- Whipped Garlic Butter Alternative:
- 150 g Unsalted butter, softened to room temperature
- 50 g Quality mayonnaise
- 2–3 cloves Fresh garlic, microplaned or finely grated into a paste
- 2 g Fine sea salt (adjust to taste)
The Meats & Cheeses
- 150 g Thinly sliced high-quality deli ham (šunka)
- 100 g Dry cured salami or Paprikáš, sliced wafer-thin
- 100 g Eidam or mild Gouda cheese, thinly sliced or cut into triangles
The Garnishes
- 3 Hard-boiled eggs, cooled, peeled, and cut into quarters or round slices
- 3–4 Sweet pickled gherkins (kyslé uhorky), fan-sliced
- 1 Fresh red bell pepper or pickled red pimento strip, finely sliced
- 1 bunch Fresh flat-leaf curly parsley sprigs
Method
- Prep the Garlic Butter Spread (Optional): In a bowl, whip softened butter with an electric hand mixer or whisk until pale and aerated. Whip in mayonnaise, grated garlic paste, and sea salt until light, fluffy, and glossy.
- Slice the Bread: Cut the veka or soft baguette at a sharp 45-degree angle to create elongated, elegant oval canvases approximately 1.5 cm thick.
- Apply the Foundation: Spread a generous, even layer (about 25–30 g) of parížsky šalát, zemiakový šalát, or whipped garlic butter edge-to-edge over each slice of bread.
- Fold the Cold Cuts: Never lay the sliced meats flat. Fold the ham slices into loose ruffled waves or loose cones. Roll or fold the salami discs in half and then into quarters to create height and dimension. Anchor the meats securely into the base.
- Add Cheese & Egg: Tuck a triangle of sliced cheese next to the ham. Place a quarter or round slice of hard-boiled egg firmly on top of the spread opposite the cold cuts.
- Garnish & Detail: Make 3–4 parallel cuts along three-quarters of a pickled gherkin slice, gently press and fan it out, and tuck it near the egg. Add a small strip of red bell pepper for sharp color contrast.
- Final Flourish: Crown each sandwich with a small, pristine sprig of fresh parsley positioned neatly between the egg and meat folds. Arrange closely on serving platters and chill until ready to serve.
Chef's Tip: Architecture and height make a world-class chlebíček. Rolling and folding your meats rather than laying them flat creates pockets that catch light and hold garnishes securely in place. Always pull the platters out of the fridge about 30 minutes before serving—if served fridge-cold, the whipped butter and mayonnaise-based salads stay hard and mute the flavors, whereas gentle room temperature brings out all the richness and softens the bread.
