Figovo-Datľové Chutney
Sweet, sticky, and tangy spiced fig and date chutney slow-simmered with balsamic vinegar, port wine, shallots, and warm spices, tailored for pairing with farmhouse cheeses and rich poultry liver pâté.
Ingredients
Dried Fruit & Aromatics
- 200 g Dried mission or Turkish figs, stems removed and roughly chopped
- 150 g Medjool or deglet noor dates, pitted and roughly diced
- 2 Medium shallots or 1 small red onion, finely minced
- 2 cloves Fresh garlic, grated
- 10 g Fresh ginger root, finely grated
- 15 ml Extra virgin olive oil or butter (for sweating aromatics)
Acidity, Liquor & Sweetness
- 80 ml Aged balsamic vinegar or dark sherry vinegar
- 60 ml Apple cider vinegar
- 100 ml Ruby Port, Madeira, or dark Slovak red wine (e.g., Frankovka Modrá)
- 150 ml Water or fresh orange juice
- 60 g Dark brown sugar or muscovado sugar
- 25 g Honey or maple syrup
Spices & Seasoning
- 1 Cinnamon stick (celá škorica)
- 2 Whole star anise pods (badián)
- 3 Whole allspice berries (nové korenie)
- 1 pinch Ground cloves (mleté klinčeky)
- 1/2 tsp Yellow mustard seeds (horčičné semienka)
- 1 pinch Crushed chili flakes (optional, for gentle back-heat)
- 4 g Fine sea salt & freshly cracked black pepper
Recommended Pairings

Method
- Sweat Aromatics: In a medium heavy-bottomed saucepan, heat olive oil over medium heat. Add finely minced shallots, grated ginger, mustard seeds, and chili flakes. Sauté for 4–5 minutes until soft, translucent, and fragrant. Stir in grated garlic for 30 seconds.
- Combine Liquids & Spices: Pour in balsamic vinegar, apple cider vinegar, ruby port, and water (or orange juice). Add brown sugar, honey, cinnamon stick, star anise, allspice berries, ground cloves, sea salt, and black pepper. Whisk over medium heat until sugar dissolves completely.
- Add Dried Fruit: Stir in the chopped dried figs and diced dates. Bring the mixture to a gentle rolling boil.
- Slow Simmer & Reduce: Lower the heat to low. Simmer uncovered for 22–25 minutes, stirring frequently with a wooden spoon to prevent sticking at the bottom, until the fruit is plump, tender, and the liquid reduces into a thick, glossy, jammy syrup.
- Finish Texture: Discard cinnamon stick, star anise, and whole allspice berries. Use a potato masher or the back of a wooden spoon to lightly crush a portion of the fruit against the side of the pot, leaving plenty of chunky pieces for texture.
- Jar & Mature: Spoon the hot chutney directly into clean, sterilized 250 ml glass jars. Seal tightly with lids and invert for 5 minutes, then cool upright to room temperature. Transfer to the pantry or fridge. Let sit for at least 48 hours before opening to let the spices marry and acidity mellow.
Chef's Tip: The balance of high-acid vinegars and deep sugars preserves this naturally in the fridge for up to 3 months. The jammy richness cuts cleanly through the iron and butter richness of liver pâté, while bringing aged farmhouse cheeses to life.
