Východniarska Hubová Mačanka
Pungent, deeply sour Eastern Slovak wild mushroom stew simmered in pure homemade sauerkraut juice (juška), thickened with a rich garlic-paprika roux and crowned with crispy pan-fried klobása for dipping.
Ingredients
Foraged Mushrooms & Pure Juška Base
- 60 g Dried wild foraged forest mushrooms (sušené dubáky / hríby smrekové / kozáky)
- 400 ml Boiling water (for rehydrating mushrooms)
- 800 ml–900 ml Pure raw fermented sauerkraut juice (domáca kapustová juška)
- 300 ml Rich pork bone or poultry stock (or water)
- 3 Dried bay leaves
- 4 Whole allspice berries (nové korenie)
- 4 Whole black peppercorns
- 4 g Fine sea salt (to taste, adjusted to brine salinity)
Fried Klobása & Aromatics
- 250 g Quality dry-smoked Slovak or Csabai sausage (údená domáca klobása), sliced into 5 mm coins
- 1 Large yellow onion, finely diced
- 5 cloves Fresh garlic, finely grated or crushed
Roux & Finish (Zápražka & Zjemnenie)
- 45 g Rendered pork lard (bravčová masť)
- 40 g All-Purpose (AP) flour (unbleached, standard US)
- 12 g Premier sweet Hungarian/Slovak paprika
- 1 g Dried wild marjoram (majoránka), crushed between palms
- 60 ml Whole milk or heavy cream (optional – only if you want to tame the sharp sour bite)
To Serve (Na Máčanie)
- Thick slabs of rustic sourdough bread or homemade Parená Knedľa for dipping.
Method
- Rehydrate Foraged Mushrooms: Place dried wild mushrooms in a heatproof bowl, pour 400 ml boiling water over them, and let steep for 20–30 minutes until plump and intensely aromatic. Strain through a fine-mesh sieve, reserving all the dark mushroom liquor. Roughly slice the rehydrated mushrooms into bite-sized pieces.
- Simmer Juška & Mushrooms: In a heavy pot, combine sliced wild mushrooms, strained dark mushroom liquor, raw sauerkraut juice (juška), stock, bay leaves, allspice berries, and black peppercorns. Bring to a boil over medium heat, lower to a gentle simmer, cover, and cook for 20 minutes until mushrooms are completely tender and the sour aromatics concentrate.
- Pan-Fry Klobása: In a heavy skillet over medium heat, melt 10 g pork lard. Add sliced smoked klobása coins and fry for 5–6 minutes until crisp, deeply browned, and rendered. Transfer the crispy sausage slices to a plate with a slotted spoon, keeping all the flavorful red paprika-tinted fat in the skillet.
- Build Paprika Garlic Roux: Add remaining 35 g pork lard to the skillet fat. Sauté diced onions over medium heat for 6–8 minutes until golden. Whisk in AP flour and cook for 2 minutes to form a fragrant roux. Remove from heat, stir in grated garlic and sweet paprika for 30 seconds until aromatic, being careful not to scorch the paprika.
- Thicken Mačanka: Ladle 300 ml of hot simmering mushroom broth into the skillet roux, whisking continuously until smooth and glossy. Pour the thickened mixture into the main pot with simmering mushrooms, stirring vigorously. Simmer gently on low heat for 10 minutes to cook out the flour starch.
- Finish & Balance: Stir in crushed marjoram (and a splash of milk or cream if you want to soften the acidity, though pure sour is best). Return half of the fried klobása slices into the pot. Discard bay leaves and allspice. Taste and balance with a pinch of sea salt if needed.
- Serve for Dipping: Ladle steaming thick mačanka into wide shallow bowls. Top generously with the remaining crispy fried klobása coins and their spicy pan drippings. Serve immediately with thick, crusty sourdough bread torn by hand for dipping.
Chef's Tip: This dish is personal. Foraging wild mushrooms in the forest at first light is one of the most important traditions I share with my family—heading out into the damp morning woods never knowing whether we'd return with full baskets of golden dubáky or if we'd have to pack soap (IYKYK). I like my mačanka punchy, assertively sour from pure homemade sauerkraut brine, packed with earthy foraged mushrooms, and topped exclusively with crispy pan-fried smoked klobása and crusty sourdough.
