Bratislavské Rožky (Makové a Orechové)
Traditional PDO-protected Pressburg pastry crescents filled with rich ground blue poppy seeds or sweetened walnuts, finished with an iconic glossy marbled egg-yolk crust.
Ingredients
Enriched Short-Yeast Dough (Cesto)
- 350 g All-Purpose (AP) flour (unbleached, standard US)
- 150 g Cold unsalted butter or 130 g rendered pork lard (cut into cubes)
- 35 g Powdered sugar
- 80 ml Whole milk (cold)
- 1 Large egg yolk
- 7 g Instant yeast (or 20 g fresh yeast)
- 3 g Fine sea salt
Poppy Seed Filling (Maková Plnka – For 'Horseshoe' Shape)
- 120 g Finely ground blue poppy seeds
- 60 g Granulated sugar
- 60 ml Whole milk
- 15 g Honey or apricot jam
- 1/2 tsp Finely grated lemon zest & a pinch of ground cinnamon
Walnut Filling (Orechová Plnka – For 'C-Crescent' Shape)
- 120 g Finely ground walnuts
- 50 g Granulated sugar + 10 g vanilla sugar
- 50 ml Whole milk
- 20 g Fine dry breadcrumbs or biscuit crumbs (to adjust moisture)
- 10 ml Dark rum (Tuzemák)
Marbled Glaze (Mramorovanie)
- 2 Large egg yolks (for first wash to dry)
- 1 Large egg white (whisked lightly, for second wash)
Method
- Cook Fillings:
- Poppy filling: In a small pot, bring milk, sugar, honey, and cinnamon to a boil. Stir in ground poppy seeds and lemon zest; cook for 1 minute until thick and paste-like. Let cool completely.
- Walnut filling: Bring milk, sugar, and vanilla sugar to a boil. Stir in ground walnuts, breadcrumbs, and rum; cook for 1 minute into a thick paste. Let cool completely.
- Weigh and roll both cooled fillings into 16 individual tapered logs (~25 g each, 8 of each type).
- Make Dough: In a bowl, rub cold butter or lard into AP flour, salt, and powdered sugar until a fine sand texture forms. Dissolve yeast and egg yolk in cold milk, pour into flour, and knead quickly for 2–3 minutes into a smooth, dense dough. Divide into 16 equal balls (~35 g each), cover, and chill in the fridge for 30 minutes.
- Shape Rožky: On an unfloured counter, roll each dough ball into a thin oval (~12x8 cm). Place a filling log along the center, wrap the dough over, and pinch the seam tightly to seal. Roll gently under your palms to elongate into a 12 cm cylinder with tapered ends.
- Poppy Seed: Curve tightly into a rounded horseshoe shape (podkovička).
- Walnut: Curve into a traditional gentle 'C' shape (polmesiac).
- First Egg Glaze: Arrange shaped rožky on parchment-lined trays. Brush thoroughly with egg yolk. Place trays in a cool drafty spot or fridge for 20 minutes until the yolk dries completely and is no longer tacky.
- Second Glaze & Cracking: Brush lightly with egg white and let dry for another 15 minutes. As the dough expands subtly, the dried yolk crust will crack into the iconic marbled pattern.
- Bake: Bake at 200°C for 12–15 minutes until deep golden-brown and glossy with distinct pale veins. (If managing in a covered stovetop setup, cook in a dry heavy cast-iron pan on low heat with a tight lid for 12 minutes until bases set and crumb bakes through). Transfer to a wire rack to cool.
Chef's Tip: This dough might feel a little strange and unusually dense or stiff compared to standard brioche or sweet bread, but trust the process—if the recipe is followed precisely, the high fat content and cold yeast fermentation will bake out into an exceptionally delicate, flaky crumb. Poppy seed pastries must be curved into a horseshoe shape, while walnut ones are curved into a crescent 'C'.
