Makovky (Sladké Makové Lúpačky)
Classic Central European crescent rolls rolled from rich sweet yeast dough, egg-washed, showered with whole blue poppy seeds, and baked until glossy and golden.
Ingredients
Sweet Yeast Dough
- 400 g All-Purpose (AP) flour (unbleached, standard US)
- 180 ml Whole milk, lukewarm (~35°C)
- 60 g Unsalted butter, melted and cooled (or rendered lard for traditional flakiness)
- 50 g Granulated sugar
- 1 Large egg yolk (keep white for wash)
- 5 g Instant yeast (or 15 g fresh yeast)
- 5 g Vanilla sugar or 2 ml vanilla extract
- 4 g Fine sea salt
- 1 tsp Finely grated lemon zest (optional)
Egg Wash & Seed Coating
- 1 Egg white whisked with 10 ml milk and a pinch of salt (for high-gloss shine)
- 35 g Whole blue poppy seeds (celý modrý mak, unground)
To Serve (Childhood Nostalgia)
- Whipped honey butter (80 g salted butter + 25 g liquid honey)
- Cold fruit yogurt cups (čučoriedkový / jahodový jogurt) or cold whole milk.
Method
- Mix Yeast Dough: In a measuring cup, whisk lukewarm milk, sugar, and yeast; let stand for 5 minutes until frothy. In a large bowl, whisk AP flour, sea salt, vanilla sugar, and lemon zest. Add frothy milk, egg yolk, and melted butter. Knead by hand for 6–8 minutes until a silky, smooth, elastic dough releases cleanly from bowl.
- First Proof: Shape into a smooth ball, cover bowl with a damp towel, and let rise in a warm spot for 50–60 minutes until doubled in volume.
- Portion & Preshape: Punch down dough and divide into 8 equal pieces (~85 g each). Roll each piece into a tight, smooth ball. Cover with a kitchen towel and let rest on the counter for 10 minutes to relax gluten.
- Roll Lúpačky: On an unfloured work surface, roll one dough ball with a rolling pin into a long, thin teardrop/triangle shape (~25 cm long, very thin at base). Starting from the wide base, roll dough up tightly away from you toward pointed tip, gently pulling tip to stretch and create multiple distinct layers. Curve ends inward into a crescent shape. Repeat for all 8 rolls.
- Second Proof: Arrange shaped crescents on a parchment-lined tray, leaving 5 cm between each. Cover loosely and proof for 30–35 minutes until noticeably puffy and light.
- Glaze & Seed: Brush each crescent gently with egg white wash, ensuring full coverage. Shower generously with whole unground blue poppy seeds.
- Bake (or Covered Stovetop Cast-Iron): In an oven, bake at 190°C for 15–18 minutes until deep golden-brown with a shiny crust. If cooking in a covered heavy cast-iron skillet on low heat with a tight lid, cook for 12 minutes, flip gently for 3 minutes to set crust, and let steam finish.
- Cool & Serve: Cool on a wire rack for 10 minutes. Serve warm split open with whipped honey butter, or dip straight into a cold cup of fruit yogurt.
Chef's Tip: Rolling the dough paper-thin into an elongated triangle before rolling creates concentric layers inside that pull apart in delicate buttery sheets (lúpať = to peel). These freeze after cooling; warm them in a hot dry pan or oven for 3 minutes to restore the crisp crust.
