Živánska v Alobale
Rustic Slovak campfire parcels packed with marinated pork neck, smoked bacon, sausages, potatoes, onions, and garlic, braised in foil on the stovetop with chilled homemade tartar sauce.
Ingredients
Pork & Marinade
- 600 g Pork neck or marbled shoulder (bravčová krkovička / pliecko), cut into 2.5 cm bite-sized cubes
- 30 ml Neutral sunflower oil or melted pork lard
- 25 g Traditional yellow or Dijon mustard (plnotučná horčica)
- 4 cloves Fresh garlic, finely grated or crushed
- 8 g Premier sweet Hungarian/Slovak paprika
- 3 g Dried wild marjoram (majoránka), crushed between palms
- 2 g Whole caraway seeds (celá rasca), crushed
- 1 g Hot paprika or crushed chili flakes (optional)
- 6 g Fine sea salt & 2 g freshly cracked black pepper
Meats, Potatoes & Aromatics
- 600 g Waxy Yukon Gold potatoes, peeled and sliced into 5 mm rounds
- 160 g Smoked slab bacon or double-smoked pork belly (údená slanina), cut into 8 mm lardons
- 200 g Quality smoked sausage or Klobása / Csabai (údená klobása), sliced into 6 mm coins
- 2 Medium yellow onions, sliced into thin wedges or rings
- 1 Red or green bell pepper, cut into 2 cm chunks (optional)
- 30 g Rendered pork lard (bravčová masť, dabbed over each parcel)
To Serve
- Domáca Tatárska Omáčka: Chilled homemade tartar sauce with shallots, capers, and gherkins.
- Sweet-sour pickled gherkins (kyslé uhorky) or pickled hot feferónky.
- Crusty fresh sourdough bread.
Method
- Marinate Pork: In a mixing bowl, whisk together sunflower oil, mustard, grated garlic, sweet paprika, crushed marjoram, caraway, salt, and black pepper. Add cubed pork neck and massage the marinade into the meat. Let sit at room temperature for 20 minutes (or refrigerate overnight).
- Prep Foil Sheets: Tear off 8 large sheets of heavy-duty aluminum foil (~35x40 cm). Lay two sheets on top of each other for each portion to form 4 double-layered parcel bases (this prevents punctures and scorching).
- Assemble Parcels: In a large bowl, toss sliced potatoes, sliced onions, and bell peppers with a pinch of salt. Divide the mixture evenly across the center of each foil double-sheet. Scatter sliced smoked klobása and smoked bacon lardons over the potatoes, then top with the marinated pork neck cubes. Dot each parcel with a small dab of pork lard (~7–8 g).
- Seal Airtight: Bring the long edges of the foil together over the top and fold down tightly several times into a seam. Fold and crimp both side ends inward firmly to create an airtight, sealed dome with room inside for steam to circulate.
- Stovetop Cast-Iron Braise: Place a large, dry heavy-bottomed skillet or Dutch oven over medium heat on your cooktop. Place 2 sealed parcels into the pan, cover the pot with a heavy lid, and cook for 30–35 minutes on medium-low heat. The bottom potatoes will crisp and caramelize in rendered bacon fat while steam cooks the pork through. Repeat for the remaining parcels.
- Serve: Transfer each foil parcel directly to a wide plate. Carefully slit the top open with a knife (watch for hot escaping steam), fold back the foil edges, and serve piping hot alongside cold Domáca Tatárska Omáčka, pickled gherkins, and crusty bread.
Chef's Tip: Double-layering heavy-duty foil lets you cook živánska directly on a dry cast-iron skillet or electric cooktop without scorching. The sliced potatoes on the bottom absorb all the smoky drippings from the klobása and pork neck, developing a golden crust that tastes straight off a campfire grill.
