Domáce Čevapčiči s Maslovými Zemiakmi
Pan-seared spiced beef and pork rolls served in the classic Slovak cafeteria style with parsley-buttered boiled potatoes, hand-pressed seasoned onion salad, traditional yellow mustard, and ajvar.
Ingredients
Čevapčiči Meat Mix
- 350 g Minced beef chuck or top round (hovädzie predné / zadné, ~15–20% fat)
- 350 g Minced pork shoulder (bravčové pliecko, ~20% fat)
- 1 Small yellow onion, very finely grated or minced into pulp
- 4 cloves Fresh garlic, finely grated or crushed
- 40 ml Sparkling mineral water or cold club soda
- 8 g Premier sweet Hungarian/Slovak paprika
- 2 g Ground black pepper
- 2 g Whole caraway seeds (celá rasca), finely crushed
- 7 g Fine sea salt
- 2 g Baking soda (jedlá sóda – for traditional springy bounce)
- 30 g–40 g Rendered pork lard (bravčová masť) or sunflower oil (for pan-searing)
Buttered Parsley Potatoes (Maslové Zemiaky)
- 800 g Waxy Yukon Gold potatoes, peeled and cut into 2.5 cm chunks
- 50 g Unsalted butter
- 15 g Fresh flat-leaf parsley, finely chopped
- 6 g Fine sea salt (for boiling water + seasoning)
Hand-Pressed Onion Salad, Mustard & Ajvar (Cibuľa, Horčica a Ajvar)
- 2 Medium yellow or red onions, sliced into thin half-moons
- 4 g Fine sea salt (for drawing moisture and sharpness)
- 15 ml Neutral sunflower oil or light olive oil
- 15 ml–20 ml White distilled vinegar or apple cider vinegar (to taste)
- 1 g Freshly cracked black pepper
- 80 g Traditional Slovak/Czech yellow mustard (plnotučná horčica)
- 80 g Roasted red pepper and eggplant relish (ajvar – mild or spicy)
Method
- Prep Hand-Pressed Onion Salad: Place thinly sliced onions into a bowl, sprinkle with 4 g fine sea salt, and massage gently with your fingers. Let sit for 10–15 minutes until softened and juices release. Squeeze out excess liquid firmly with your hands and discard the bitter water. Toss the softened onions with sunflower oil, vinegar, and freshly cracked black pepper. Cover and set aside.
- Mix & Emulsify Meat: In a large bowl, combine minced beef, minced pork, onion pulp, grated garlic, sweet paprika, black pepper, crushed caraway, sea salt, baking soda, and sparkling water. Knead vigorously with your hands for 4–5 minutes until the mixture turns tacky, glossy, and cohesive. Cover and chill in the fridge for 30 minutes.
- Shape Rolls: With wet hands, divide the chilled meat mixture into 16 equal portions (~45 g each). Roll each portion into a firm cylinder roughly 7–8 cm long and 2.5 cm thick.
- Boil Butter Potatoes: Place potato chunks into a pot of cold salted water. Bring to a boil over medium-high heat and cook for 12–15 minutes until tender. Drain thoroughly, return to the warm pot off heat, add unsalted butter and fresh chopped parsley, and toss gently until melted and coated.
- Pan-Sear Čevapčiči: Melt pork lard in a large heavy skillet over medium-high heat. Lay meat rolls into the hot pan without overcrowding. Sear for 6–8 minutes total, rolling them frequently so all sides develop a deep golden-brown crust and stay juicy inside (internal temperature 74°C).
- Plate & Serve: Plate 4 hot čevapčiči per portion alongside warm buttered parsley potatoes. Spoon a mound of seasoned hand-pressed onions next to the meat and serve with a generous dollop of classic yellow mustard alongside sweet-smoky ajvar.
Chef's Tip: Salting and hand-squeezing the raw sliced onions removes the harsh sulfur bite without making them mushy, while a touch of oil and vinegar coats them into a glossy, crisp relish. Kneading the meat mixture with sparkling water and baking soda provides that signature cafeteria-style bounce.
