Zemiaky na Kyslo (Zemiakový Prívarok)
Traditional Slovak creamy sweet-sour potato stew slow-simmered with bay leaves, allspice, and sour cream, finished with fresh dill, vinegar, and pan-seared crosshatch knockwurst halves.
Ingredients
Potato & Stew Base
- 800 g Starchy Russet or Yukon Gold potatoes, peeled and cut into 1.5 cm cubes or thin slices
- 600 ml Rich poultry or vegetable stock (or water)
- 3 Dried bay leaves
- 4 Whole allspice berries (nové korenie)
- 6 g Fine sea salt & 1 g freshly cracked black pepper
Roux & Sour Cream Finish
- 35 g Rendered pork lard or unsalted butter
- 35 g All-Purpose (AP) flour (unbleached, standard US)
- 200 ml Full-fat sour cream (kyslá smotana, min. 20% fat)
- 100 ml Whole milk
- 20 ml–30 ml Apple cider vinegar or white distilled vinegar (to taste)
- 10 g–15 g Granulated sugar (to balance acidity)
- 15 g Fresh dill (kôpor), finely chopped
Knockwurst & Toppings
- 4 links (~450 g) Boar's Head uncured knockwurst (špekáčiky substitute), halved lengthwise and scored skin-side in a tight diamond crosshatch pattern
- 15 g Rendered pork lard or butter (for pan-searing sausages)
- Tradičná Fašírka: Crispy fried pork patties, or sunny-side-up fried eggs (volské oko).
- Crusty sourdough bread.
Method
- Simmer Potatoes: Place cubed potatoes in a medium pot with stock (or water), bay leaves, allspice berries, and 6 g salt. Bring to a boil over medium-high heat, then lower heat, cover partially, and simmer for 12–15 minutes until potatoes are fork-tender. Do not drain.
- Make Golden Roux: In a separate small saucepan over medium heat, melt 35 g pork lard or butter. Whisk in AP flour and cook for 2 minutes to create a pale golden roux (zápražka).
- Thicken Stew: Ladle 200 ml of hot potato cooking liquid into the roux while whisking vigorously until completely smooth. Pour the roux mixture back into the simmering pot of potatoes, stirring gently. Simmer for 5 minutes until thickened.
- Temper Sour Cream: In a small bowl, whisk sour cream with whole milk until smooth. Stir in a ladle of hot broth to temper, then pour into the simmering potatoes while stirring gently.
- Season & Balance: Turn off heat. Stir in fresh chopped dill, vinegar, and sugar. Taste and balance: the profile should be distinctly velvety, creamy, gently sour, and lightly sweet. Discard bay leaves and allspice.
- Pan-Sear Knockwurst Halves: Melt 15 g lard in a skillet over medium-high heat. Place the halved knockwurst cut-side down for 2 minutes until browned, then flip skin-side down and sear for 3–4 minutes until the crosshatch scores bloom wide and turn deeply caramelized and crispy.
- Serve: Ladle hot stew into shallow bowls, topped with two crispy crosshatch knockwurst halves, a freshly fried Tradičná Fašírka, or a fried egg, accompanied by crusty bread.
Chef's Tip: Halving the knockwurst lengthwise before crosshatching the skin exposes maximum surface area to the hot lard, letting the fat render down into crunchy, curled ridges that mimic traditional fire-roasted Slovak špekáčiky.
