Tradičné Holúbky (Plnené Kapustné Listy)
Eastern Slovakian style stuffed cabbage rolls packed with seasoned minced pork, smoked lardons, and rice, slow-braised on the stovetop over a bed of sauerkraut with tomato reduction.
Ingredients
Cabbage Leaves & Bedding
- 1 large head Savoy cabbage (kel) or white cabbage, core removed (or whole fermented sour cabbage head)
- 400 g Naturally fermented sauerkraut (kyslá kapusta), drained and lightly chopped
- 150 g Smoked slab bacon or double-smoked pork belly (údená slanina), diced into 6 mm lardons
Pork & Rice Filling
- 700 g Minced pork shoulder or pork neck (bravčové pliecko / krkovička, ~20% fat)
- 120 g Parboiled or medium-grain rice (rinsed and drained)
- 1 Large egg
- 2 Medium yellow onions, finely diced
- 4 cloves Fresh garlic, finely grated
- 30 g Rendered pork lard (bravčová masť)
- 15 g Premier sweet Hungarian/Slovak paprika
- 3 g Whole caraway seeds (celá rasca), lightly crushed
- 8 g Fine sea salt & 2 g freshly cracked black pepper
Tomato Braising Liquor
- 100 g Double-concentrated tomato paste (paradajkový pretlak)
- 500 g Tomato passata / crushed sieved tomatoes
- 600 ml Rich poultry or pork bone stock (hot)
- 3 Dried bay leaves
- 4 Whole allspice berries
- 15 g Granulated sugar (to balance acidity)
- 5 g Fine sea salt
To Serve
- Crusty fresh sourdough bread, dollops of full-fat sour cream (kyslá smotana), and chopped fresh dill or parsley.
Method
- Parboil Cabbage Leaves: Bring a large pot of salted water to a boil. Submerge the whole cored cabbage head for 3–5 minutes until outer leaves soften. Peel off 16–18 large pliable leaves and transfer to cold water. Trim flat the thick raised center vein on each leaf without cutting through the leaf itself.
- Sauté Aromatics & Bacon: In a skillet over medium heat, render diced smoked bacon in pork lard for 5 minutes. Add finely diced onions and crushed caraway; cook for 6–8 minutes until golden. Stir in grated garlic and sweet paprika off heat for 30 seconds. Allow to cool.
- Mix Filling: In a large mixing bowl, combine minced pork, rinsed raw rice, cooled sautéed onion-bacon mixture, egg, 8 g sea salt, and black pepper. Mix thoroughly by hand until tacky and cohesive.
- Roll Holúbky: Lay a cabbage leaf flat with the stem base facing you. Place ~50 g of filling near the bottom. Fold the bottom edge up over the meat, fold both side flaps tightly inward, and roll forward into a neat, compact parcel. Repeat for all leaves.
- Build Pot Layers: In a large, wide Dutch oven or heavy pot, scatter half the chopped sauerkraut over the bottom. Arrange cabbage rolls tightly seam-side down in single or double compact layers. Top with the remaining sauerkraut.
- Prepare Braising Sauce: Whisk together tomato passata, tomato paste, hot stock, sugar, bay leaves, allspice, and 5 g salt. Pour evenly over the layered cabbage rolls (liquid should reach the top level of the rolls).
- Stovetop Simmer: Bring to a gentle simmer over medium heat. Cover tightly with a heavy lid, drop heat to low, and simmer gently for 75–80 minutes until meat is tender, rice is plump, and cabbage rolls are silky.
- Rest & Serve: Take off heat and rest for 15 minutes before serving. Dish up hot cabbage rolls surrounded by braised sauerkraut, tomato gravy, a spoon of cold sour cream, and crusty bread.
Chef's Tip: This is my mom's absolute go-to centerpiece whenever she has to feed a hungry crowd back home. Nothing beats a massive pot of holúbky bubbling on the stovetop; packing them tightly keeps the parcels intact, and braising with raw rice ensures every grain drinks up the rich, smoky pork and bacon juices from within.
