Zbojnícka Kapsa (Kuracie Soté v Placke)
Crispy raw potato pancake folded over spicy chicken sauté with sweet corn, peppers, onions, mushrooms, and garlic, topped with melted grated cheese and homemade tartar sauce.
Ingredients
Chicken Sauté (Kuracie Soté)
- 600 g Boneless, skinless chicken thighs or breast, cut into 1 cm strips
- 30 g Rendered pork lard (bravčová masť) or neutral oil
- 1 Large yellow onion, sliced into half-moons
- 150 g White button mushrooms, sliced
- 100 g Sweet corn kernels (canned or blanched frozen)
- 1 Red bell pepper & 1 green bell pepper, cut into thin strips
- 3 cloves Fresh garlic, finely grated
- 30 g Tomato paste (paradajkový pretlak)
- 10 g Premier sweet Hungarian/Slovak paprika
- 2 g Hot paprika or chili flakes (to taste)
- 150 ml Rich chicken stock (hot)
- 6 g Fine sea salt & freshly cracked black pepper (to taste)
Potato Pancake Batter (Zemiakové Placky)
- 800 g Starchy Russet potatoes, peeled and finely grated raw into a wet pulp
- 70 g–90 g All-Purpose (AP) flour (unbleached, standard US)
- 1 Large egg
- 3 cloves Fresh garlic, finely grated or crushed
- 5 g Dried wild marjoram (majoránka), crushed between palms
- 6 g Fine sea salt & 2 g black pepper
- 100 g–150 g Rendered pork lard or high-heat oil (for shallow frying)
Garnish & Pairing
- 120 g Young unsmoked provolone, finely grated
- Fresh flat-leaf parsley, finely chopped
- Domáca Tatárska Omáčka: Homemade herbed caper tartar sauce for serving.
Method
- Cook Chicken Sauté: Melt 30 g pork lard in a wide skillet over high heat. Add chicken strips and sear quickly for 3–4 minutes until lightly browned. Add sliced onions, mushrooms, bell peppers, and sweet corn; sauté for 4–5 minutes until vegetables soften around the edges.
- Build Sauté Sauce: Stir in grated garlic, sweet paprika, hot paprika, and tomato paste. Cook for 1 minute until fragrant. Pour in hot chicken stock, season with salt and pepper, and simmer over medium heat for 4–5 minutes until the sauce reduces into a thick, glossy glaze that clings tightly to the chicken and vegetables. Keep warm off heat.
- Mix Pancake Batter: Place raw grated potatoes into a large bowl. Stir in egg, 3 cloves grated garlic, crushed marjoram, fine sea salt, and black pepper. Gradually stir in AP flour just until a cohesive, wet batter forms.
- Fry Placky: Heat 25 g lard in a large non-stick skillet over medium-high heat. Ladle a generous portion of batter (~180 g) into the pan, spreading it with the back of a spoon into an even, thin oval disc roughly 22–24 cm wide. Fry for 3–4 minutes until bottom is deep golden and crisp, flip gently, and fry the second side for 2–3 minutes.
- Fill & Fold: Transfer hot potato pancake to a warmed plate. Spoon a fourth of the hot chicken and corn sauté across one half of the pancake. Fold the empty half over the filling to create a half-moon pocket (kapsa).
- Garnish & Serve: Immediately scatter finely grated cheese over top so it melts against the hot crust. Serve piping hot alongside a generous dollop of cold Domáca Tatárska Omáčka and chopped fresh parsley.
Chef's Tip: This dish runs under a dozen different regional names depending on where you order it—from Zbojnícka kapsa and Bačov mešec to Gazdovský batoh, or simply Ondavské tajomstvo back home in Stropkov named after the Ondava river. The golden rule remains identical: keep the sauté glaze tight and thick so steam doesn't soften the crunchy potato crust when folded.
