Strapačky s Kyslou Kapustou
Fresh grated potato halušky tossed with slowly caramelized sauerkraut and fragrant caraway, finished with crisp smoked lardons or kept vegetarian/vegan with rich plant oils.
Ingredients
Caramelized Sauerkraut Base
- 500 g Naturally fermented sauerkraut (kyslá kapusta), drained and roughly chopped
- 1 Medium yellow onion, finely diced
- 3 g Whole caraway seeds (celá rasca)
- 8 g Granulated sugar (to balance acidity)
- 2 g Freshly cracked black pepper
- Fat & Garnish Options:
- Traditional (Pork): 200 g Smoked slab bacon or double-smoked pork belly (údená slanina), diced into 8 mm lardons + 25 g Rendered pork lard (bravčová masť)
- Vegetarian: 50 g Unsalted butter (or ghee) for sautéing, finished with browned butter
- Vegan: 45 ml Neutral sunflower oil or cold-pressed rapeseed oil, optionally finished with crispy fried shallots or smoked tofu lardons
Potato Halušky Base
- 600 g Starchy Russet potatoes (peeled and finely grated raw into wet pulp)
- 220 g–260 g All-Purpose (AP) flour (unbleached, standard US)
- 1 Large egg (Note: Omit completely for authentic vegan dough—simply adjust with 20 g–30 g extra flour)
- 6 g Fine sea salt
To Cook & Serve
- 4 L Water + 15 g Fine sea salt (for boiling halušky)
- Crispy bacon lardons, browned butter, or fried onions for garnish
- Bryndzové Halušky: Recommended to serve alongside for a traditional half-and-half platter (pol na pol).
Method
- Render Fat or Warm Oil:
- With Meat: In a wide skillet over medium heat, render diced smoked bacon in pork lard until crisp (6–8 minutes). Lift out half the lardons for garnish; leave rendered fat in the pan.
- Vegetarian / Vegan: Heat butter or sunflower oil in the skillet over medium heat until shimmering.
- Caramelize Sauerkraut: Add finely diced onion and whole caraway seeds to the hot fat. Sauté for 6–8 minutes until soft and translucent. Stir in chopped sauerkraut, sugar, and cracked black pepper. Lower heat to medium-low, cover, and braise for 20 minutes until the cabbage softens and deepens in color.
- Prep Potato Pulp: Finely grate peeled raw potatoes on the finest rasp holes of a box grater into a large bowl. Keep all natural potato starch water in the bowl.
- Mix Halušky Batter: Add salt and egg (if using) into the potato pulp. Fold in All-Purpose flour with a wooden spoon just until a wet, tacky dropping batter forms. For vegan preparation without egg, let the batter rest 2 minutes so potato starch hydrates the flour.
- Boil Dumplings: Bring 4 L of salted water to a rapid rolling boil. Press batter through a haluškovač directly into the water, scraping across the perforations. Stir once gently from the bottom.
- Toss & Serve: Once dumplings float to the surface, cook for 90 seconds. Transfer with a spider strainer directly into the pan of hot caramelized sauerkraut. Toss vigorously over low heat for 1 minute until well coated. Top with reserved crispy lardons (or crispy onions / browned butter) and serve hot.
Chef's Tip: Authentic Slovak halušky dough does not require an egg—traditional shepherd kitchens relied solely on raw potato starch and flour. Skipping the egg and braising the caraway sauerkraut in sunflower oil makes this dish naturally 100% vegan without sacrificing chew or texture.
