Kačacie Stehno Confit, Dusená Červená Kapusta a Borievkové Jus
Slow stovetop confit duck legs paired with spiced sweet-tart red cabbage and rich juniper-infused pan jus.
Ingredients
Cure & Duck Confit
- 4 Duck legs (approx. 220 g–250 g each), excess fat trimmed
- 18 g Fine sea salt
- 4 cloves Garlic, crushed
- 4 sprigs Fresh thyme
- 2 Dried bay leaves, crushed
- 600 g–800 g Rendered duck fat (enough to submerge legs)
Braised Red Cabbage (Dusená Červená Kapusta)
- 800 g Red cabbage, finely shredded
- 1 Large yellow onion, finely diced
- 40 g Duck fat
- 45 g Granulated sugar
- 40 ml Apple cider vinegar (or red wine vinegar)
- 150 ml Red wine or rich stock
- 1 Tart apple (e.g. Granny Smith), peeled and grated
- 3 g Whole caraway seeds
- 6 g Fine sea salt
Juniper Pan Jus (Borievkové Jus)
- 350 ml Rich dark duck or poultry stock
- 6 Whole juniper berries, lightly crushed
- 60 ml Dry red wine
- 10 ml–15 ml Cabernet Sauvignon vinegar (or quality aged red wine vinegar)
- 15 g Cold unsalted butter, cubed
Method
- Cure Duck: Rub duck legs evenly with sea salt, crushed garlic, thyme, and bay leaves. Place in a shallow dish, cover, and refrigerate for 8–12 hours. Rinse under cold water and pat thoroughly dry with paper towels.
- Stovetop Confit: Place legs into a heavy Dutch oven or deep pot. Melt duck fat and pour over until legs are submerged. Heat over low until the fat reaches a very gentle sub-simmer (approx. 85°C–90°C, faint lazy bubbles). Cover tightly and cook over lowest heat on your burner for 2.5 to 3 hours until meat is tender and pulling from the bone.
- Braise Red Cabbage: In a separate wide saucepan, melt 40 g duck fat over medium heat. Add diced onion and cook until soft. Stir in sugar and cook 2–3 minutes until lightly caramelized. Add caraway seeds, shredded cabbage, salt, vinegar, grated apple, and wine. Cover and simmer over low heat for 40–45 minutes, stirring occasionally until glossy and tender. Adjust sweet-tart balance with an extra splash of vinegar if needed.
- Make Juniper Jus: In a small saucepan, combine crushed juniper berries and red wine. Simmer over medium-high heat until reduced by two-thirds. Pour in rich stock and simmer gently until reduced to a glossy coating consistency (~120 ml). Strain out solids, return to low heat, add the splash of Cabernet Sauvignon vinegar to wake up the brightness, and swirl in cold butter off the heat.
- Crisp & Plate: Lift confit legs from fat. Heat a dry skillet over medium-high and sear legs skin-side down for 3–4 minutes until blistered and deeply crisp. Serve atop braised red cabbage with steamed lokše or knedľa, spooning hot juniper jus around the plate.
Chef's Tip: Keep your burner at the absolute lowest setting during confiting so the fat gently poaches without frying, which keeps the meat moist and silky.
