Tradičné Zemiakové Lokše
Traditional Slovak dry-griddled potato flatbreads brushed with rich melted duck fat, or finished with butter or quality oil for vegetarian and vegan service.
Ingredients
Potato Dough (Naturally Vegan)
- 1000 g Starchy Russet potatoes, boiled whole in skins until tender, thoroughly cooled and peeled
- 250 g–300 g All-Purpose (AP) flour (unbleached, standard US)
- 10 g Fine sea salt
Finishing Fat Options
- 80 g–100 g Rendered duck fat (traditional, savoury)
- Vegetarian Option: 80 g–100 g Unsalted European butter, melted or lightly browned
- Vegan Option: 70 ml–80 ml Neutral sunflower oil, cold-pressed rapeseed oil, or melted plant butter
To Serve
- Savoury: Rolled alongside roasted poultry and braised cabbage, or filled with garlic, sheep cheese, or sautéed cabbage.
- Sweet: Brushed with melted butter, rolled with ground blue poppy seeds or walnuts, and dusted with powdered sugar.
Method
- Prep Potatoes: Finely grate the thoroughly cooled, peeled potatoes onto a clean work surface using the fine star holes of a box grater, or press them through a potato ricer.
- Form Dough: Scatter the fine sea salt and 250 g AP flour over the potatoes. Swiftly and gently knead by hand into a smooth, cohesive dough. Add the remaining 50 g flour only if tacky. Work briskly—resting potato dough causes salt to pull out water, making it loose and sticky.
- Portion & Roll: Divide dough immediately into 10–12 equal portions (~100 g each) and shape into smooth balls. On a well-floured bench, roll each portion with a rolling pin into a round disk roughly 2 mm thick (~20–22 cm diameter). Dust excess raw flour off both sides before cooking.
- Dry Griddle: Heat a heavy, dry skillet (cast iron or carbon steel) over medium-high heat with no oil whatsoever. Lay the flatbread into the dry pan and cook for 1–2 minutes until bubbling with dark roasted blisters. Flip and cook 1 minute on the reverse side. Wipe away any scorched loose flour between rounds with a dry kitchen towel.
- Brush & Stack: Transfer the hot lokša to a warm plate and immediately brush the top surface generously with warm duck fat, melted butter (for vegetarian), or plant butter/oil (for vegan). Stack subsequent flatbreads directly on top of one another, brushing each layer so the steam and fat keep them soft and pliable.
Chef's Tip: The base dough is naturally vegan (just potatoes, flour, and salt). Always boil the potatoes a day ahead in their skins and refrigerate unpeeled overnight; cold starch grains rice dry and fluffy without turning into wallpaper paste.
